Just before Christmas, we ate the last of our persimmons. Our small tree produced at least 20 pounds. We harvested them a little too soon but they do ripen at room temperature and even in the fridge.
The Peaches
The peaches, on the other hand, we harvested for two months straight from four trees by the bucket. The freezer is still full!
For next year, we want to be more in control of the harvest and do some green harvesting. And, we pruned the trees way back so we won’t have so much uncontrolled growth. Less peaches ripening on the tree also means better quality peaches, and less stress on the tree.
Fresh Peaches At Their Finest
Altogether, these peaches have been fabulous. Since peaches do not ripen once picked, the only way to get a flavorful peach is to let them ripen on the tree!
